Monday Monday, so good to me

Monday Monday, it was all I hoped it would be ...


Now we all have The Mamas and The Papas song in our heads, you're welcome.


For me, Monday is one of the busiest days of the week. Hubby is back to work, I am busy with transactions and paperwork for my job, then there is the grocery shopping, meal prep, laundry, picking up the house, and ... you know, it's the same for everyone, just different days.


With the flurry of activity there is a tiny sliver of available time to create a tasty dinner that is quick, easy, healthy, and affordable with leftovers for the next days lunch or dinner. That's when I grab my Instant Pot, it makes dinner prep a win/win!


White Chicken Chili with Sweet Potatoes is a favorite, it's a little sweet with a little heat and is topped with avocado and lime, it's OHHHHH SOOOO GOOOOD. The recipe is from The Running Momma (recipe link below). I use chicken thighs instead of breast meat for more flavor and omit the cilantro, but you do you. Add a side salad (caprese salad is my go to) with cherry tomatoes, pearl mozzerella balls, and basil with a splash of lemon infused olive oil and balsamic glaze and you're set! Seriously, it can't get any easier!



And while that yummy soup is busy cooking away in the Instant Pot, why not throw together a quick scratch baked lemon blueberry bunt cake (recipe link below) for the week (who are we kidding here, this cake will be gone in 3 days or less). But really, this cake is super easy and super quick. I like to use Meyer lemons because they are slightly sweet - did you know a Meyer lemon is a cross between a mandarin orange and lemon? I have a Meyer lemon tree and am anxiously waiting for it to produce yummy lemons for us!


Back to the bunt cake ... This cake is super moist, has a delicate crumb, not overly sweet and the blueberries are well, simply yummy! The drizzle provides extra sweetness, but again, not too sweet.

I have brought this delicious confection to potlucks, gatherings, bible studies and to family and friends who are under the weather, and each time this beautiful bunt graces the doorway it's met with the same OHHHHH AHHHHH - You're an immediate pastry chef!


While the cost of food has skyrocketed, this meal is not only affordable, but tasty and will span two meals or more!


I can't wait for my garden to begin giving us pumpkins! There is soooo much you can do with that beautiful orange squash/fruit/gourd (depends on who you ask)! Stay tuned!
